The food that I can eat year round, any time of day, no matter the weather is egg salad. My momma has made me egg salad ever since I was young but at this point I don’t really know how similar my recipe is to her original.
My favorite way to eat egg salad is on a plain bagel, but as of late I have been obsessed with eating everything on tortilla shells so that was my go to this last time I made it. I have also found that this egg salad can be good for dipping crackers or just eating plain.
Something that makes my egg salad recipe a little different is that I scramble my eggs. This is not something I thought was out of the norm until very recently when my friends finally confessed to how weird it was that I scrambled my eggs first. But nonetheless, this is still my all time favorite recipe.
Prep Time: 10-15 minutes
1/2 cup of mayo
1 tablespoon of mustard
3 pickle spears (or as many as desired)
your carb of choice ex: bagel, tortilla shell, or crackers
First, I like to start scrambling my eggs. I do this first to allow time for me to prepare the other components for optimal time management.
While my eggs are cooking, I begin to dice the pickles. I tend to do one full pickle or several pickle spears. I also do not try an avoid the pickle juice because I feel it adds to the flavor.
Next I place my two condiments into their measuring cups and finish cooking the eggs.
Once the eggs are completed, place them into a small mixing bowl, and then add the rest of the ingredients. Once it is all stirred together, make sure that you like the consistently, and adjust accordingly. If it is too runny, than add more eggs or mayo. It is too thick, add more pickle juice.
